Ingredients

  • 2 pounds (900 g) bone-in, skin-on chicken thighs

  • 2 tablespoons olive oil

  • 2 tablespoons lemon pepper seasoning

  • 1 teaspoon salt

  • 3 cloves garlic, minced

  • Zest of 1 large lemon

  • 2 tablespoons fresh lemon juice


Instructions

  • Preheat the oven to 400°F (200°C). Pat the chicken thighs dry with paper towels.

  • In a large bowl, combine olive oil, lemon pepper seasoning, salt, garlic, lemon zest, and lemon juice.

  • Add the chicken thighs to the bowl and toss until evenly coated.

  • Heat an oven-safe skillet over medium heat and place the chicken skin-side down. Cook for 5 to 7 minutes until the skin is golden and crisp.

  • Flip the chicken thighs and transfer the skillet to the preheated oven.

  • Bake for 25 to 30 minutes, or until the internal temperature reaches 165°F (74°C).

  • Remove from the oven and let rest for 5 minutes before serving.

Notes

  • Boneless chicken thighs can be used; reduce cooking time accordingly.

  • For extra lemon flavor, serve with additional fresh lemon wedges.

  • Leftovers store well in the refrigerator for up to four days.
