Ingredients

2 tablespoons olive oil

1 medium onion, finely chopped

8 cloves garlic, minced

2 cans (15 oz / 425 g each) chickpeas, drained and rinsed

3 cups (720 ml) vegetable broth

1 cup (240 ml) milk or unsweetened plant-based milk

1/2 cup (120 ml) heavy cream or plant-based cream

1 teaspoon ground cumin

1/2 teaspoon smoked paprika

1/2 teaspoon black pepper

1 teaspoon salt

1 tablespoon lemon juice
Instructions

Heat olive oil in a large pot over medium heat and sauté onion until soft.

Add garlic and cook until fragrant.

Stir in chickpeas, spices, salt, and pepper.

Add vegetable broth and simmer for 12–15 minutes.

Blend until smooth.

Stir in milk and cream, then simmer gently.
