A cozy, creamy soup made with chickpeas and garlic, perfect for comforting weeknight dinners and easy meal prep.


Ingredients

  • 2 tablespoons olive oil

  • 1 medium onion, finely chopped

  • 8 cloves garlic, minced

  • 2 cans (15 oz / 425 g each) chickpeas, drained and rinsed

  • 3 cups (720 ml) vegetable broth

  • 1 cup (240 ml) milk or unsweetened plant-based milk

  • 1/2 cup (120 ml) heavy cream or plant-based cream

  • 1 teaspoon ground cumin

  • 1/2 teaspoon smoked paprika

  • 1/2 teaspoon black pepper

  • 1 teaspoon salt

  • 1 tablespoon lemon juice


Instructions

  • Heat olive oil in a large pot over medium heat and sauté onion until soft.

  • Add garlic and cook until fragrant.

  • Stir in chickpeas, spices, salt, and pepper.

  • Add vegetable broth and simmer for 12–15 minutes.

  • Blend until smooth.

  • Stir in milk and cream, then simmer gently.

  • Finish with lemon juice and serve warm.

Notes

  • Adjust thickness with extra broth or milk if needed.

  • Garnish with parsley or toasted chickpeas for added texture.
