Description

A flavorful Middle Eastern-inspired wrap filled with spiced marinated chicken, fresh vegetables, and creamy homemade garlic sauce.


Ingredients

900 g (2 lbs) boneless, skinless chicken thighs

3 tablespoons olive oil

3 tablespoons plain yogurt

4 cloves garlic, minced

1 tablespoon lemon juice (15 ml)

2 teaspoons ground cumin

2 teaspoons ground coriander

1 teaspoon smoked paprika

1 teaspoon ground turmeric

1 teaspoon ground cinnamon

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon ground cardamom

¼ teaspoon ground cloves

1 cup (240 ml) mayonnaise

4 cloves garlic, grated

2 tablespoons lemon juice (30 ml)

2 tablespoons olive oil

2 tablespoons plain yogurt

¼ teaspoon salt

6 large pita breads

1 cup (150 g) diced tomatoes

1 cup (120 g) sliced cucumbers

½ cup (60 g) red onion

½ cup (75 g) pickled cucumbers

½ cup (50 g) shredded lettuce


Instructions

Combine olive oil, yogurt, garlic, lemon juice, and spices. Add chicken and marinate for at least 2 hours.

Roast at 220°C (425°F) for 25–30 minutes or cook in a skillet until fully done. Slice thinly.

Mix mayonnaise, garlic, lemon juice, olive oil, yogurt, and salt to make garlic sauce.

Warm pita, spread garlic sauce, add chicken and vegetables, then wrap tightly.

Notes

Marinate overnight for deeper flavor.

Store leftovers separately for best freshness.
