A simple and healthy oven-baked zucchini recipe with a crispy, flavorful coating, perfect as a side dish or snack.
Ingredients
3 medium zucchinis (about 600 g), sliced
2 tablespoons olive oil (30 ml)
1 teaspoon garlic powder (5 g)
1 teaspoon dried oregano (5 g)
½ teaspoon paprika (2.5 g)
½ teaspoon salt (2.5 g)
¼ teaspoon black pepper (1 g)
½ cup grated Parmesan cheese (50 g)
¼ cup breadcrumbs (30 g)
Directions
Preheat oven to 200°C (400°F).
Wash and slice zucchini evenly.
Toss with olive oil and seasonings.
Add Parmesan and breadcrumbs, mix well.
Arrange on a lined baking sheet.
Bake for 20–25 minutes, flipping halfway.
Serve warm.
