These BBQ Chicken Quesadillas are crispy on the outside, cheesy on the inside, and packed with bold barbecue flavor. Perfect for quick dinners or casual gatherings.
Ingredients

Cooked chicken breast, shredded – 2 cups (300 g)

Barbecue sauce – ¾ cup (180 ml)

Shredded mozzarella cheese – 1½ cups (170 g)

Shredded cheddar cheese – 1 cup (115 g)

Red onion, thinly sliced – ½ medium (60 g)

Bell pepper, thinly sliced – 1 medium (120 g)

Olive oil or butter – 2 tablespoons

Large flour tortillas – 4 (25 cm / 10-inch)
Instructions

In a bowl, mix the shredded chicken with barbecue sauce until evenly coated.

Heat a skillet over medium heat and add a little oil or butter.

Place a tortilla in the skillet and sprinkle cheese over half of it.

Add BBQ chicken, onion, and bell pepper, then top with more cheese.

Fold the tortilla and cook for 3–4 minutes per side until golden and melted.

Remove, rest briefly, slice, and serve.
Notes
For best results, use freshly shredded cheese and avoid overfilling the tortillas to keep them crisp and easy to flip.
