Ingredients
-
3 large sweet potatoes, peeled and cut into 1-inch cubes
-
3 tablespoons unsalted butter, melted
-
1/4 cup brown sugar, packed
-
1 teaspoon ground cinnamon
-
1/2 teaspoon ground nutmeg
-
1/2 teaspoon salt
-
1/4 teaspoon black pepper
-
1 teaspoon pure vanilla extract
-
1–2 tablespoons maple syrup (optional)
-
Fresh parsley or thyme for garnish (optional)
Instructions
-
Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or lightly grease it.
-
Peel and cut sweet potatoes into uniform 1-inch cubes for even cooking.
-
In a large mixing bowl, whisk together melted butter, brown sugar, cinnamon, nutmeg, salt, pepper, and vanilla extract. Add maple syrup if desired.
-
Toss the sweet potato cubes in the glaze until evenly coated.
-
Spread the cubes in a single layer on the prepared baking sheet, leaving space between them to allow for proper roasting.
-
Bake for 25–30 minutes, flipping halfway through to ensure even caramelization. The sweet potatoes should be tender inside and slightly crisp on the edges.
-
Remove from the oven, let cool for 2–3 minutes, and garnish with parsley or thyme if desired. Serve warm.
Notes
-
For best results, use fresh sweet potatoes rather than canned.
-
Adjust the sweetness by increasing or decreasing the brown sugar or maple syrup.
-
Roasted sweet potatoes can be stored in the refrigerator for 4–5 days and reheat well in the oven or on a skillet.
-
Optional spices or garnishes like smoked paprika, rosemary, or toasted nuts can add extra flavor and texture.
