Description

A warm, hearty casserole inspired by classic chicken burrito flavors, perfect for an easy and comforting family meal.


Ingredients

  • 2 cups cooked chicken breast, diced or shredded (about 450 g)

  • 1 cup long-grain white rice, uncooked (190 g)

  • 2 cups chicken broth or water (480 ml)

  • 1 can black beans, drained and rinsed (15 oz / 425 g)

  • 1 cup corn kernels (150 g)

  • 1 cup mild salsa (240 g)

  • 1 teaspoon ground cumin (2 g)

  • 1 teaspoon chili powder (2 g)

  • ½ teaspoon garlic powder (1 g)

  • ½ teaspoon onion powder (1 g)

  • ¾ teaspoon salt (4 g)

  • ½ teaspoon ground black pepper (1 g)

  • 2 cups shredded cheddar or mozzarella-style cheese (200 g)

  • 1 tablespoon olive oil (15 ml)


Instructions

  • Preheat oven to 375°F (190°C) and grease a baking dish with olive oil.

  • Combine uncooked rice and chicken broth in the baking dish.

  • Add chicken, beans, corn, salsa, and all seasonings. Stir gently.

  • Cover tightly and bake for 40 minutes.

  • Uncover, add cheese, and bake for 10–15 minutes until melted.

  • Rest for 5–10 minutes before serving.

Notes

  • For extra creaminess, stir in ¼ cup (60 g) plain yogurt or sour cream alternative before adding cheese.

  • Letting the casserole rest before serving helps it set and improves texture.
