  • 4 cups frozen hashbrowns, thawed

  • 1 cup diced fresh tomatoes

  • 1/2 cup chopped fresh basil leaves

  • 2 cups shredded cheddar cheese

  • 1 cup shredded mozzarella cheese

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 1 cup sour cream

  • 1/2 cup mayonnaise

  • 1/4 cup milk

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1/2 teaspoon paprika

  • 1/4 teaspoon crushed red pepper flakes (optional)


Instructions

  • Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish with butter or non-stick spray.

  • In a large bowl, combine thawed hashbrowns, diced tomatoes, and chopped onion. Stir gently to distribute evenly.

  • Add minced garlic and chopped basil to the mixture and fold in carefully to preserve the texture of the hashbrowns.

  • Stir in 1 1/2 cups of cheddar cheese and all of the mozzarella cheese. Reserve 1/2 cup of cheddar for the topping. Mix gently until combined.

  • In a separate bowl, whisk together sour cream, mayonnaise, and milk. Season with salt, black pepper, paprika, and optional red pepper flakes. Pour over the hashbrown mixture and fold until coated evenly.

  • Transfer the mixture to the prepared baking dish and spread evenly. Sprinkle the reserved 1/2 cup cheddar cheese on top for a golden crust.

  • Bake in the preheated oven for 45-50 minutes, until the top is golden brown and the edges are bubbling.

  • Remove from the oven and let cool for 5-10 minutes before serving.

  • Optional: Garnish with additional chopped basil or a sprinkle of paprika for added color and freshness.

Notes

Thaw hashbrowns completely to avoid excess water in the casserole.
You can assemble the casserole a day in advance and refrigerate until ready to bake.
