Ingredients

Tortilla chips – 400 g (14 oz)

Ground beef – 450 g (1 lb)

Olive oil – 1 tablespoon

Onion, chopped – 1 medium

Garlic, minced – 3 cloves

Ground cumin – 1 teaspoon

Paprika – 1 teaspoon

Chili powder – 1 teaspoon

Salt – 1 teaspoon

Black pepper – ½ teaspoon

Tomato paste – 2 tablespoons

Water – 60 ml (¼ cup)

Cheddar cheese, shredded – 300 g (3 cups)

Mozzarella cheese, shredded – 200 g (2 cups)

Black beans – 240 g (1 cup)

Corn – 150 g (1 cup)

Tomatoes, diced – 200 g (1½ cups)

Jalapeños, sliced – 60 g (¼ cup)

Green onions – 4 stalks

Fresh cilantro – 20 g (½ cup)

Sour cream – 240 g (1 cup)

Guacamole – 1 cup
Instructions

Preheat oven to 190°C (375°F).

Cook onion in olive oil until soft, then add garlic.

Brown ground beef and season with spices, salt, and pepper.

Stir in tomato paste and water; simmer briefly.

Layer half the chips, beef, beans, corn, and cheese on a baking tray.

Repeat layers with remaining ingredients.

Bake for 12–15 minutes until cheese is melted.

Top with tomatoes, jalapeños, green onions, and cilantro.

Serve immediately with sour cream and guacamole.
Notes
