Description

A comforting, family-friendly casserole that combines crispy potato tots with classic pizza flavors and plenty of melted cheese.


Ingredients

  • Frozen potato tots – 32 ounces (900 g)

  • Olive oil – 1 tablespoon

  • Onion, finely diced – 1 medium (150 g)

  • Bell pepper, diced – 1 cup (150 g)

  • Mushrooms, sliced – 1 cup (100 g)

  • Garlic, minced – 2 cloves

  • Marinara or pizza sauce – 2 cups (480 ml)

  • Dried Italian seasoning – 2 teaspoons

  • Dried oregano – 1 teaspoon

  • Salt – ½ teaspoon

  • Black pepper – ½ teaspoon

  • Shredded mozzarella cheese – 3 cups (300 g)

  • Shredded cheddar cheese – 1 cup (100 g)

  • Black olives, sliced – ½ cup (75 g)

  • Fresh basil or parsley, chopped – 2 tablespoons


Instructions

  • Preheat oven to 400°F (200°C) and grease a 9×13-inch baking dish.

  • Spread potato tots evenly in the dish and bake for 20 minutes.

  • Heat olive oil in a skillet, sauté onion until soft.

  • Add bell pepper and mushrooms; cook until tender.

  • Stir in garlic, seasonings, salt, and pepper.

  • Add sauce and simmer briefly.

  • Spoon sauce mixture over baked tots.

  • Top with mozzarella, cheddar, and olives.

  • Bake for 20–25 minutes until bubbly.

  • Garnish with fresh herbs before serving.
