Description

A flavorful and satisfying bowl featuring smoky chipotle shrimp served over zesty cilantro lime rice, topped with fresh vegetables and vibrant ingredients.


Ingredients

450 g (1 lb) large shrimp, peeled and deveined

2 tablespoons olive oil

1 tablespoon chipotle chili powder

1 teaspoon smoked paprika

1 teaspoon garlic powder

½ teaspoon ground cumin

½ teaspoon salt

¼ teaspoon black pepper

Juice of 1 lime (2 tablespoons / 30 ml)

1 cup (200 g) long-grain white rice

2 cups (480 ml) water

1 tablespoon olive oil

½ teaspoon salt

Juice of 1 lime (2 tablespoons / 30 ml)

¼ cup (15 g) chopped cilantro

Optional: black beans, corn, avocado, tomatoes, red onion


Instructions

Rinse rice and cook with water, olive oil, and salt until tender.

Stir in lime juice and cilantro; set aside.

Mix shrimp with oil and spices; marinate for 10–15 minutes.

Cook shrimp in a hot skillet for 2–3 minutes per side.

Add lime juice to shrimp and remove from heat.

Assemble bowls with rice, shrimp, and desired toppings.

Notes

Do not overcook shrimp to keep them tender.

Adjust spice level according to preference.

Store components separately for meal prep up to 3 days.
