A warm, creamy vegetable soup packed with wholesome ingredients and gentle herbs. Perfect for cozy evenings, this one-pot recipe is comforting, nourishing, and easy to prepare.
Ingredients
2 tablespoons olive oil (30 ml)
1 medium onion, finely chopped (about 1 cup / 150 g)
3 cloves garlic, minced
2 medium carrots, diced (about 1 cup / 130 g)
2 celery stalks, diced (about ¾ cup / 100 g)
2 medium potatoes, peeled and cubed (about 2 cups / 300 g)
1 cup broccoli florets (150 g)
1 cup cauliflower florets (150 g)
4 cups vegetable broth (960 ml)
1 cup milk (240 ml)
½ cup heavy cream (120 ml)
2 tablespoons all-purpose flour (16 g)
1 teaspoon salt (5 g)
½ teaspoon black pepper (2 g)
1 teaspoon dried thyme (1 g)
½ teaspoon dried parsley (1 g)
½ cup frozen peas (75 g)
½ cup sweet corn kernels (75 g)
½ cup shredded cheese, optional (50 g)
1 tablespoon fresh chopped parsley for garnish
Instructions
Heat olive oil in a large pot over medium heat. Add chopped onion and cook for 3–4 minutes until softened.
Stir in minced garlic and cook for about 30 seconds.
Add diced carrots, celery, and potatoes. Cook for 5 minutes, stirring occasionally.
Sprinkle flour over the vegetables and stir well. Cook for 1–2 minutes.
Slowly pour in vegetable broth while stirring to avoid lumps.
Add broccoli, cauliflower, thyme, parsley, salt, and pepper. Bring to a boil.
Reduce heat and simmer for 15 minutes until vegetables are tender.
Stir in milk and heavy cream and simmer for 5 minutes.
Add frozen peas and corn and cook for another 3–4 minutes.
Stir in shredded cheese if using and mix until melted.
Garnish with fresh parsley and serve warm.
Notes
For a thicker soup, mash some of the potatoes directly in the pot or blend a small portion of the soup and stir it back in.
Additional vegetables like zucchini, spinach, or green beans can easily be added for extra flavor and nutrition.
If the soup becomes too thick when reheating, simply add a little milk or vegetable broth to reach the desired consistency.
