Ingredients
-
1 sheet puff pastry, thawed
-
4 oz brie cheese, cut into small cubes
-
1/4 cup cranberry sauce or cranberry preserves
-
1 teaspoon honey (optional)
-
1/4 teaspoon freshly ground black pepper
-
1 tablespoon chopped fresh rosemary or thyme (optional, for garnish)
-
1 egg, beaten (for egg wash)
-
Fresh rosemary sprigs, extra cranberry sauce, nuts, or pomegranate seeds for serving (optional)
Instructions
-
Preheat your oven to 400°F (200°C). Line a mini muffin tin with paper liners or lightly grease the tin to prevent sticking.
-
Roll out the thawed puff pastry on a lightly floured surface. Cut into 2 x 2-inch squares.
-
Place a cube of brie in the center of each pastry square. Add a teaspoon of cranberry sauce on top. Drizzle with honey if desired and sprinkle lightly with black pepper.
-
Gently fold the corners of the pastry over the brie and cranberry, forming a small open-top pouch. Press edges lightly to seal.
-
Brush the tops with beaten egg for a glossy, golden finish.
-
Bake for 15-20 minutes, or until the pastry is puffed and golden and the brie is melted.
-
Allow bites to cool slightly, then garnish with fresh herbs if desired. Serve warm, optionally with extra cranberry sauce, nuts, or pomegranate seeds.
Notes
-
Use fully thawed but cold puff pastry for best results.

-
These bites can be assembled ahead of time and refrigerated until ready to bake.
