Instructions

  • Prepare the corn: If using fresh corn, cut the kernels off the cob. For frozen corn, thaw completely and drain excess water. Remove any shriveled kernels for the best texture.

  • Cook the butter and flour: Melt butter in a medium saucepan over medium heat. Whisk in the flour to create a smooth roux, cooking 1–2 minutes until lightly golden to thicken the creamed corn.

  • Add the liquids: Gradually pour in the milk and heavy cream while whisking constantly to prevent lumps. Cook 3–4 minutes until the mixture begins to thicken, stirring frequently.

  • Combine with corn: Stir in the corn, sugar (if using), salt, black pepper, and smoked paprika. Reduce heat to low and simmer 10–12 minutes, stirring occasionally until the mixture is thick and creamy.

  • Finish and garnish: Taste and adjust seasoning. Remove from heat and stir in chopped parsley for color and flavor. Serve warm.

  • Substitute part of the milk with extra cream for richer creamed corn.
