Ingredients

  • 1 pound (450 g) chicken breast, bite-size pieces

  • 1 tablespoon olive oil

  • 2 tablespoons unsalted butter

  • 4 cloves garlic, minced

  • 1 teaspoon onion powder

  • 1 teaspoon dried parsley

  • ½ teaspoon dried thyme

  • ½ teaspoon black pepper

  • ¾ teaspoon salt

  • 1 cup (240 ml) chicken broth

  • 1 cup (240 ml) heavy cream

  • ¾ cup (75 g) cream cheese, softened

  • 1 cup (100 g) shredded cheddar cheese

  • 1 pound (450 g) potato gnocchi

  • 2 cups (60 g) fresh spinach


Instructions

  • Heat olive oil and butter in a skillet over medium heat and cook chicken until golden and cooked through. Remove and set aside.

  • Add garlic and seasonings to the same skillet and cook until fragrant.

  • Pour in chicken broth, then stir in cream and cream cheese until smooth.

  • Add gnocchi, cover, and simmer until tender.

  • Return chicken to the skillet along with cheddar cheese and spinach. Stir until melted and wilted.

  • Serve warm and enjoy.
