Ingredients
-
4 boneless, skinless chicken breasts (thinly sliced if thick)
-
1 teaspoon salt (more to taste)
-
1 teaspoon black pepper
-
1 teaspoon garlic powder
-
2 tablespoons olive oil
-
4 tablespoons butter, divided
-
6 cloves garlic, minced
-
1 cup chicken broth (low sodium)
-
1 cup heavy cream
-
1 teaspoon Italian seasoning
-
1/2 cup freshly grated Parmesan cheese
-
1 tablespoon cornstarch (optional for thickening)
-
2 tablespoons fresh parsley, chopped (for garnish)
Instructions
-
Pat the chicken breasts dry and season both sides with salt, pepper, and garlic powder.
-
Heat olive oil and 2 tablespoons butter in a large skillet over medium-high heat. Add chicken and cook for 5–6 minutes per side until golden brown and cooked through. Set aside on a plate.
-
Lower heat to medium and add the remaining butter to the skillet. Stir in minced garlic and cook for about 1 minute until fragrant.
-
Pour in chicken broth and scrape up browned bits from the bottom of the pan. Let it simmer for 2–3 minutes.
-
Stir in heavy cream, Italian seasoning, and Parmesan cheese. Let the sauce bubble gently until slightly thickened. For a thicker sauce, mix cornstarch with 2 tablespoons of water and add as needed.
-
Return chicken to the skillet and spoon sauce over the top. Simmer another 3–5 minutes until heated through.
-
Garnish with fresh parsley and serve hot with pasta, rice, potatoes, or vegetables.
