Ingredients

12 oz (340 g) short pasta

3 cups corn kernels

1 tablespoon olive oil

¾ cup mayonnaise

½ cup sour cream

1½ tablespoons lime juice

1 teaspoon lime zest

1 teaspoon chili powder

½ teaspoon smoked paprika

½ teaspoon ground cumin

½ teaspoon garlic powder

¾ teaspoon salt

½ teaspoon black pepper

½ cup crumbled cheese

⅓ cup chopped red onion

⅓ cup chopped fresh cilantro

½ cup diced red bell pepper

¼ cup sliced green onions
Instructions

Cook pasta in salted water until al dente. Drain and cool.

Sauté corn in olive oil until lightly charred. Cool.

Whisk mayonnaise, sour cream, lime juice, zest, and spices in a bowl.

Toss pasta with dressing until coated.
