Description

These Garlic Herb Mushroom Crostini are the perfect combination of crispy bread and a rich, savory mushroom topping. The garlicky aroma, fresh herbs, and buttery mushrooms create a comforting appetizer that everyone will love.


Ingredients

  • 1 French baguette, sliced into ½-inch thick rounds

  • 3 tablespoons olive oil

  • 1 garlic clove, halved

  • Salt, to taste

For the Mushroom Topping:

  • 2 tablespoons olive oil

  • 2 tablespoons butter

  • 1 small onion, finely diced

  • 3 garlic cloves, minced

  • 16 ounces mushrooms (cremini, button, or mixed), cleaned and sliced

  • 1 teaspoon dried thyme (or 1 tablespoon fresh thyme leaves)

  • 1 teaspoon dried oregano

  • ½ teaspoon crushed red pepper flakes (optional)

  • Salt and freshly ground black pepper, to taste

  • 2 tablespoons chopped fresh parsley

  • 1 tablespoon lemon juice (optional, for brightness)

Optional Garnish:

  • Grated Parmesan or Pecorino cheese

  • Fresh thyme leaves

  • Extra chopped parsley


Instructions

  • Preheat your oven to 375°F (190°C). Arrange baguette slices on a baking sheet. Brush both sides with olive oil and sprinkle lightly with salt.

  • Bake for 8–10 minutes, flipping halfway through, until golden and crisp. Rub each warm slice with the cut side of a garlic clove for flavor. Set aside.

  • Heat 2 tablespoons olive oil and 2 tablespoons butter in a large skillet over medium heat. Add the diced onion and cook for 3–4 minutes until softened.

  • Stir in the minced garlic and cook for 30 seconds until fragrant.

  • Add the sliced mushrooms in a single layer. Let them cook undisturbed for 4 minutes, then stir and cook another 6–8 minutes until golden and tender.

  • Season with thyme, oregano, crushed red pepper (if using), salt, and pepper. Stir to coat and cook 2 more minutes.

  • Remove from heat and mix in fresh parsley and lemon juice for brightness.

  • Spoon the warm mushroom mixture onto each toasted baguette slice. Sprinkle with Parmesan, thyme leaves, or parsley if desired.

  • Serve immediately while the crostini are warm and crisp.

Notes

  • Don’t overcrowd the pan—cook mushrooms in batches for the best sear.

  • For a richer version, add a layer of ricotta or cream cheese before topping with mushrooms.

  • Assemble crostini right before serving to keep them crisp.

  • Mix different mushrooms (cremini, button, shiitake) for added depth of flavor.
