Ingredients
3 large cucumbers (about 900 g), thinly sliced
150 g feta cheese, crumbled
1/4 red onion (50 g), thinly sliced
2 tablespoons fresh parsley (8 g), chopped
2 tablespoons fresh mint (8 g), chopped
3 tablespoons lemon juice (45 ml)
3 tablespoons olive oil (45 ml)
1 teaspoon lemon zest (2 g)
1/2 teaspoon salt (3 g)
1/4 teaspoon black pepper (1 g)
Instructions
Wash and thinly slice the cucumbers, then place them in a large bowl.
Add the thinly sliced red onion to the bowl.
Chop parsley and mint, then add them to the mixture.
In a small bowl, whisk together lemon juice, olive oil, lemon zest, salt, and pepper.
Pour the dressing over the vegetables and toss gently.
Add crumbled feta cheese and fold it in carefully.
Chill for 10–15 minutes before serving for best flavor.

Use fresh herbs for the best flavor.
Adjust salt depending on feta’s saltiness.
Serve chilled for optimal taste.
