  • 1/2 cup milk (whole or 2%)

  • 1 cup diced bell peppers (mix of red, yellow, and orange)

  • 1/2 cup crumbled goat cheese

  • 1/2 cup diced onion

  • 1 cup fresh spinach, chopped

  • 1 teaspoon garlic powder

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1 tablespoon olive oil or butter

  • 1/4 teaspoon crushed red pepper flakes (optional)

  • Fresh parsley or chives, chopped (for garnish)


Instructions

  • Preheat the oven to 375°F (190°C) and grease a 9×9-inch baking dish with olive oil or butter.

  • In a medium skillet over medium heat, sauté diced onion and bell peppers in olive oil or butter until soft, about 5–6 minutes. Add spinach in the last minute of cooking until wilted. Remove from heat and cool slightly.

  • In a large bowl, whisk together eggs, milk, garlic powder, salt, and black pepper until slightly frothy.

  • Stir in the sautéed vegetables and fold in crumbled goat cheese evenly.

  • Pour the mixture into the prepared baking dish and spread evenly. Sprinkle crushed red pepper flakes on top if desired.

  • Bake for 25–30 minutes or until eggs are fully set and lightly golden. Insert a knife in the center to check doneness; it should come out clean.

  • Let cool for 5–10 minutes before slicing. Garnish with fresh parsley or chives and serve warm.
