1 lb (450 g) ground beef

1 medium onion, finely chopped

3 cloves garlic, minced

8 oz (225 g) mushrooms, sliced

2 tablespoons olive oil

2 tablespoons butter

2 tablespoons all-purpose flour

2 cups beef broth

1 tablespoon Worcestershire sauce

1 teaspoon Dijon mustard

1 teaspoon paprika

1/2 teaspoon salt, or to taste

1/4 teaspoon black pepper, or to taste

1 cup sour cream

8 oz (225 g) egg noodles or pasta of choice

Fresh parsley, chopped for garnish
Instructions

Bring a large pot of salted water to a boil and cook egg noodles according to package instructions. Drain and set aside.

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add ground beef, season with salt and pepper, and cook until browned. Remove and set aside.

In the same skillet, add remaining olive oil and butter. Sauté onions for 3–4 minutes until softened, then add garlic and mushrooms. Cook until mushrooms are golden and moisture has evaporated.

Sprinkle flour over vegetables and stir for 1–2 minutes. Gradually pour in beef broth while stirring constantly. Add Worcestershire sauce, Dijon mustard, paprika, salt, and black pepper. Simmer 3–5 minutes until slightly thickened.

Return ground beef to the skillet and stir to combine. Simmer 2–3 minutes.

Remove from heat and stir in sour cream until smooth.
