  • 3 cloves garlic, minced

  • 1 cup mushrooms, sliced

  • 1 tablespoon Dijon mustard

  • 1/2 teaspoon black pepper

  • 1/2 teaspoon salt, or to taste

  • 1 cup beef broth

  • 1 cup heavy cream

  • 2 teaspoons cornstarch (optional, for thickening)

  • 12 oz egg noodles or pasta of choice

  • Fresh parsley, chopped, for garnish


Instructions

  • Prepare the noodles: Bring a large pot of salted water to a rolling boil. Add the noodles and cook according to package instructions until al dente. Drain, toss with a teaspoon of olive oil, and set aside.

  • Sear the prime rib: Heat olive oil in a large skillet over medium-high heat. Add sliced prime rib in batches if necessary, searing 1–2 minutes per side until browned. Remove and cover loosely to keep warm.

  • Cook the aromatics: In the same skillet, sauté chopped onions for 3–4 minutes until soft and translucent. Add garlic and cook 1 minute until fragrant.

  • Add mushrooms: Stir in sliced mushrooms and cook 5–6 minutes until tender and their juices release.

  • Build the sauce: Reduce heat to medium. Add Dijon mustard, smoked paprika, salt, and pepper, stirring to combine. Pour in beef broth, scraping the skillet to lift browned bits. Simmer 5 minutes.

  • Incorporate cream: Pour in heavy cream while stirring. For a thicker sauce, dissolve cornstarch in water and stir in. Simmer 3–4 minutes until sauce thickens.

  • Return the beef: Add seared prime rib back to the skillet and stir to coat in sauce. Simmer 2–3 minutes until beef is warmed through.

  • Combine with noodles: Add cooked noodles to the skillet, tossing gently to coat evenly with sauce.

  • Garnish and serve: Sprinkle with chopped parsley and serve immediately while hot.
