This comforting one-pan dinner combines caramelized onions, tender chicken, fluffy rice, and melted cheese for a flavorful and satisfying meal perfect for busy weeknights or cozy family dinners.
Ingredients
2 tablespoons olive oil (30 ml)
3 large yellow onions, thinly sliced
3 cloves garlic, minced
1 teaspoon dried thyme (2 g)
1 teaspoon salt (5 g)
½ teaspoon black pepper (1 g)
1 cup long-grain white rice (200 g)
2 cups low-sodium chicken broth (480 ml)
4 boneless, skinless chicken breasts (about 1½ pounds / 680 g)
1 cup shredded mozzarella cheese (100 g)
1 cup grated Gruyère-style cheese (100 g)
1 tablespoon fresh parsley, chopped (4 g, optional)
Instructions
Preheat oven to 375°F (190°C).
Heat olive oil in a large oven-safe skillet over medium heat. Add sliced onions and cook 20–25 minutes until caramelized.
Stir in garlic, thyme, salt, and pepper. Cook 1–2 minutes.
Add rice and stir to combine. Pour in chicken broth.
Nestle chicken breasts into the rice mixture. Cover tightly with foil or a lid.
Bake for 30–35 minutes until rice is tender and chicken reaches 165°F (74°C).
Remove cover, sprinkle mozzarella and Gruyère-style cheese on top.
Bake uncovered 10–15 minutes until cheese is melted and golden.
Rest 5–10 minutes before serving. Garnish with parsley if desired.
Notes
For deeper flavor, caramelize onions slowly over medium-low heat.
If rice needs more liquid, add 2–3 tablespoons (30–45 ml) warm broth and bake covered for 5 additional minutes.
Chicken thighs may be substituted for extra juiciness.
Store leftovers refrigerated up to 4 days or freeze up to 2 months.
