Ingredients

680 g (1 ½ lb) boneless, skinless chicken breasts

60 ml (¼ cup) olive oil

45 ml (3 tbsp) lemon juice

3 garlic cloves, minced

2 tsp dried oregano

1 tsp ground cumin

1 tsp paprika
-
¾ tsp salt

½ tsp black pepper

360 g (2 cups) cooked rice

1 large cucumber, diced
-
250 g (1 ½ cups) cherry tomatoes, halved

½ small red onion, sliced

120 g (¾ cup) feta-style cheese

60 g (½ cup) sliced olives

240 g (1 cup) Greek-style yogurt
-
100 g (½ cucumber), grated

1 tbsp olive oil
-
1 tbsp lemon juice
-
1 garlic clove, minced

¼ tsp salt
Instructions

Mix olive oil, lemon juice, garlic, oregano, cumin, paprika, salt, and pepper. Marinate chicken for at least 30 minutes.

Cook chicken in a hot skillet for 6–7 minutes per side until fully cooked. Rest and slice.

Stir yogurt, grated cucumber, olive oil, lemon juice, garlic, and salt to make tzatziki.

Assemble bowls with rice, chicken, vegetables, olives, cheese, and sauce.
