Description

A fresh and satisfying Mediterranean-inspired meal featuring marinated chicken, vibrant vegetables, fluffy rice, and creamy tzatziki—perfect for busy weeknights.


Ingredients

  • 680 g (1 ½ lb) boneless, skinless chicken breasts

  • 60 ml (¼ cup) olive oil

  • 45 ml (3 tbsp) lemon juice

  • 3 garlic cloves, minced

  • 2 tsp dried oregano

  • 1 tsp ground cumin

  • 1 tsp paprika

  • ¾ tsp salt

  • ½ tsp black pepper

  • 360 g (2 cups) cooked rice

  • 1 large cucumber, diced

  • 250 g (1 ½ cups) cherry tomatoes, halved

  • ½ small red onion, sliced

  • 120 g (¾ cup) feta-style cheese

  • 60 g (½ cup) sliced olives

  • 240 g (1 cup) Greek-style yogurt

  • 100 g (½ cucumber), grated

  • 1 tbsp olive oil

  • 1 tbsp lemon juice

  • 1 garlic clove, minced

  • ¼ tsp salt


Instructions

  • Mix olive oil, lemon juice, garlic, oregano, cumin, paprika, salt, and pepper. Marinate chicken for at least 30 minutes.

  • Cook chicken in a hot skillet for 6–7 minutes per side until fully cooked. Rest and slice.

  • Stir yogurt, grated cucumber, olive oil, lemon juice, garlic, and salt to make tzatziki.

  • Assemble bowls with rice, chicken, vegetables, olives, cheese, and sauce.

Notes

This recipe is excellent for meal prep. Store components separately for best texture and freshness.
