A cozy and hearty layered beef and potato casserole inspired by classic hobo foil meals, perfect for easy dinners and comforting nights.
Ingredients

1 lb (450 g) ground beef

4 medium potatoes (about 1.5 lbs / 680 g), thinly sliced

1 medium onion, thinly sliced

1 cup (240 ml) beef broth

1 cup (115 g) shredded cheddar cheese

2 tbsp (30 g) butter, melted

1 tsp salt

1 tsp black pepper

1 tsp garlic powder

1 tsp onion powder

1 tsp paprika

1 tbsp fresh parsley, chopped (optional)
Instructions

Preheat oven to 375°F (190°C). Lightly grease a baking dish.

Season ground beef with salt, pepper, garlic powder, onion powder, and paprika.

Layer half the potatoes in the dish, then half the onions. Spread the seasoned beef over the layer. Top with remaining onions and potatoes.

Pour beef broth evenly over the dish. Drizzle melted butter on top.

Cover tightly with foil and bake 55–60 minutes, until potatoes are tender.

Remove foil, sprinkle cheddar cheese on top, and bake 10–12 minutes more.

Let rest 5 minutes, garnish with parsley, and serve warm.

Yukon gold or russet potatoes give the best texture.

Add sliced carrots, peas, or bell peppers for extra vegetables.
