Description

A cozy and hearty layered beef and potato casserole inspired by classic hobo foil meals, perfect for easy dinners and comforting nights.


Ingredients

  • 1 lb (450 g) ground beef

  • 4 medium potatoes (about 1.5 lbs / 680 g), thinly sliced

  • 1 medium onion, thinly sliced

  • 1 cup (240 ml) beef broth

  • 1 cup (115 g) shredded cheddar cheese

  • 2 tbsp (30 g) butter, melted

  • 1 tsp salt

  • 1 tsp black pepper

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp paprika

  • 1 tbsp fresh parsley, chopped (optional)


Instructions

  • Preheat oven to 375°F (190°C). Lightly grease a baking dish.

  • Season ground beef with salt, pepper, garlic powder, onion powder, and paprika.

  • Layer half the potatoes in the dish, then half the onions. Spread the seasoned beef over the layer. Top with remaining onions and potatoes.

  • Pour beef broth evenly over the dish. Drizzle melted butter on top.

  • Cover tightly with foil and bake 55–60 minutes, until potatoes are tender.

  • Remove foil, sprinkle cheddar cheese on top, and bake 10–12 minutes more.

  • Let rest 5 minutes, garnish with parsley, and serve warm.

Notes

  • Yukon gold or russet potatoes give the best texture.

  • Add sliced carrots, peas, or bell peppers for extra vegetables.

  • For a lighter version, substitute ground turkey or chicken.
