Description

A refreshing and shareable pasta salad inspired by classic Italian flavors, perfect for gatherings, meal prep, or a light main dish.


Ingredients

  • 450 g (1 lb) bow tie pasta (farfalle)

  • 2 cups (300 g) cooked chicken breast, diced

  • 1 cup (150 g) cherry tomatoes, halved

  • 1 cup (150 g) cucumber, diced

  • 1 cup (150 g) red bell pepper, chopped

  • ½ cup (75 g) red onion, thinly sliced

  • ½ cup (75 g) black olives, sliced

  • ¾ cup (90 g) shredded mozzarella-style cheese

  • ¼ cup (10 g) fresh parsley, chopped


Instructions

  • ½ cup (120 ml) extra virgin olive oil

  • ¼ cup (60 ml) fresh lemon juice

  • 2 tablespoons apple cider vinegar

  • 2 teaspoons Dijon mustard

  • 1 teaspoon dried oregano

  • 1 teaspoon dried basil

  • ½ teaspoon garlic powder

  • ½ teaspoon salt

  • ¼ teaspoon ground black pepper

Notes

  • Cook the bow tie pasta in salted boiling water until al dente. Drain and cool completely.

  • In a large bowl, combine pasta, chicken, tomatoes, cucumber, bell pepper, onion, olives, cheese, and parsley.

  • Whisk all dressing ingredients together until well blended.

  • Pour dressing over the salad and toss gently to combine.

  • Refrigerate for at least 30 minutes before serving.
