A refreshing and shareable pasta salad inspired by classic Italian flavors, perfect for gatherings, meal prep, or a light main dish.
Ingredients

450 g (1 lb) bow tie pasta (farfalle)

2 cups (300 g) cooked chicken breast, diced

1 cup (150 g) cherry tomatoes, halved

1 cup (150 g) cucumber, diced

1 cup (150 g) red bell pepper, chopped

½ cup (75 g) red onion, thinly sliced

½ cup (75 g) black olives, sliced

¾ cup (90 g) shredded mozzarella-style cheese

¼ cup (10 g) fresh parsley, chopped
Instructions

½ cup (120 ml) extra virgin olive oil

¼ cup (60 ml) fresh lemon juice

2 tablespoons apple cider vinegar

2 teaspoons Dijon mustard

1 teaspoon dried oregano
-
1 teaspoon dried basil

½ teaspoon garlic powder
-
½ teaspoon salt

¼ teaspoon ground black pepper
Notes

Cook the bow tie pasta in salted boiling water until al dente. Drain and cool completely.

In a large bowl, combine pasta, chicken, tomatoes, cucumber, bell pepper, onion, olives, cheese, and parsley.

Whisk all dressing ingredients together until well blended.

Pour dressing over the salad and toss gently to combine.

Refrigerate for at least 30 minutes before serving.
