  • 2 cups creamy peanut butter

  • 1 cup mashed ripe bananas (about 2 medium bananas)

  • 1/2 cup unsalted butter

  • 1 teaspoon vanilla extract

  • 4 cups powdered sugar, sifted

  • 1/4 cup heavy cream

  • Pinch of salt

Optional toppings:

  • Chopped peanuts

  • Crushed banana chips

Instructions

  • Line an 8×8-inch square baking pan with parchment paper and lightly grease it with butter.

  • Mash the ripe bananas in a medium bowl until smooth, leaving small chunks if desired.

  • In a medium saucepan over low heat, melt the butter and peanut butter together, stirring frequently. Remove from heat once smooth.

  • Stir in the mashed bananas and heavy cream until fully combined.

  • Add vanilla extract and a pinch of salt, mixing thoroughly.

  • Gradually add sifted powdered sugar, one cup at a time, stirring constantly until smooth and creamy.

  • Pour the mixture into the prepared pan and smooth the top with a spatula. Sprinkle optional toppings if desired.

  • Refrigerate for 2–3 hours or until firm. Cover with plastic wrap to prevent odors from the fridge.

  • Lift the fudge from the pan using the parchment paper and cut into squares. Store in an airtight container in the refrigerator for up to one week.
