Description
A simple, family-friendly dish that combines tender chicken, sweet pineapple, and fluffy rice for an easy and satisfying meal.
Ingredients

1 lb (450 g) chicken breast, cut into bite-sized pieces

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 cup (165 g) pineapple chunks, fresh or canned (drained)

1/4 cup (60 ml) soy sauce

2 tablespoons honey

1/2 teaspoon black pepper

1/2 teaspoon ground ginger

1 cup (185 g) long-grain white rice

2 cups (480 ml) water
Instructions

Rinse the rice under cold water, then combine it with water in a saucepan. Bring to a boil, reduce heat, cover, and simmer for 15–18 minutes until tender. Set aside.

Heat olive oil in a large skillet over medium heat. Add the chicken pieces and cook for 5–7 minutes until lightly golden and cooked through.

Add the chopped onion and cook for 2–3 minutes until softened. Stir in the garlic and cook for 30 seconds.

Add the pineapple chunks, soy sauce, honey, black pepper, and ground ginger. Stir well to coat the chicken evenly.

Reduce heat to low and simmer for 5–7 minutes, allowing the sauce to thicken slightly.

Serve the pineapple chicken over the cooked rice and enjoy warm.

Adjust sweetness by adding more or less honey to taste.

For extra vegetables, add bell peppers or snap peas during the final simmer.
