2 thick-cut ribeye steaks (about 1 inch thick)

4 tablespoons unsalted butter, softened

2 garlic cloves, minced

1 teaspoon fresh rosemary, finely chopped

1 teaspoon fresh thyme, finely chopped

½ teaspoon smoked paprika

¼ teaspoon black pepper

½ teaspoon salt, or to taste

1 tablespoon olive oil

Optional garnish: chopped parsley
Instructions

In a small bowl, combine softened butter, minced garlic, rosemary, thyme, smoked paprika, salt, and pepper. Mix until smooth and set aside.

Remove the steaks from the refrigerator 20–30 minutes before cooking to reach room temperature.

Heat a heavy skillet or cast-iron pan over medium-high heat and add olive oil. Heat until shimmering.

Pat steaks dry with paper towels and season generously with salt and black pepper.

Place steaks in the hot skillet and sear for 3–4 minutes on the first side without moving them. Flip and sear the other side for another 3–4 minutes for medium-rare. Adjust time for your preferred doneness.

Reduce heat to medium-low and add the prepared cowboy butter on top of the steaks. Spoon melted butter over the steaks for 1–2 minutes.
