  • 2 thick-cut ribeye steaks (about 1 inch thick)

  • 4 tablespoons unsalted butter, softened

  • 2 garlic cloves, minced

  • 1 teaspoon fresh rosemary, finely chopped

  • 1 teaspoon fresh thyme, finely chopped

  • ½ teaspoon smoked paprika

  • ¼ teaspoon black pepper

  • ½ teaspoon salt, or to taste

  • 1 tablespoon olive oil

  • Optional garnish: chopped parsley


Instructions

  • In a small bowl, combine softened butter, minced garlic, rosemary, thyme, smoked paprika, salt, and pepper. Mix until smooth and set aside.

  • Remove the steaks from the refrigerator 20–30 minutes before cooking to reach room temperature.

  • Heat a heavy skillet or cast-iron pan over medium-high heat and add olive oil. Heat until shimmering.

  • Pat steaks dry with paper towels and season generously with salt and black pepper.

  • Place steaks in the hot skillet and sear for 3–4 minutes on the first side without moving them. Flip and sear the other side for another 3–4 minutes for medium-rare. Adjust time for your preferred doneness.

  • Reduce heat to medium-low and add the prepared cowboy butter on top of the steaks. Spoon melted butter over the steaks for 1–2 minutes.

  • Transfer steaks to a cutting board and let rest for 5–10 minutes to redistribute juices.

  • Slice against the grain, drizzle with remaining cowboy butter, and garnish with parsley. Serve with your choice of sides.

  • For thicker steaks, extend cooking time and check doneness with a thermometer.
