Ingredients

  • 2 lbs boneless, skinless chicken breasts (or thighs if preferred)

  • 1 ½ cups long-grain white rice, rinsed

  • 1 medium onion, finely diced

  • 3 cloves garlic, minced

  • 3 cups low-sodium chicken broth

  • 2 lemons (zested and juiced)

  • 1 lemon sliced (for cooking and garnish)

  • 1 teaspoon dried oregano

  • 1 teaspoon dried thyme

  • 1 teaspoon paprika

  • 1 teaspoon salt (adjust to taste)

  • ½ teaspoon black pepper

  • 2 tablespoons olive oil

  • 1 cup frozen peas or fresh baby spinach (optional)


Instructions

  • Lightly grease the inside of your slow cooker with olive oil.

  • Spread rinsed rice evenly across the bottom of the slow cooker.

  • Add diced onion and garlic over the rice.

  • Season the chicken with salt, pepper, oregano, thyme, and paprika.

  • Place the chicken over the rice and vegetables.

  • In a bowl, combine chicken broth, lemon juice, and lemon zest. Pour over the chicken and rice.

  • Place lemon slices on top of the chicken.

  • Cover and cook on LOW for 4 to 5 hours, or until chicken is cooked through and rice is tender.

  • Stir in peas or spinach during the last 20 minutes of cooking, if using.

  • Fluff rice with a fork before serving and garnish with lemon slices if desired.

Notes

  • Rinse rice to prevent stickiness.

  • Use fresh lemon for best flavor.

  • Add more broth if rice looks dry before chicken is done.

  • Avoid lifting the lid too often to maintain cooking temperature.

  • Optional: stir in a spoonful of plain yogurt or milk after cooking for extra creaminess.
