Ingredients

2 lbs boneless, skinless chicken breasts (or thighs if preferred)

1 ½ cups long-grain white rice, rinsed

1 medium onion, finely diced

3 cloves garlic, minced

3 cups low-sodium chicken broth

2 lemons (zested and juiced)

1 lemon sliced (for cooking and garnish)

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon paprika

1 teaspoon salt (adjust to taste)

½ teaspoon black pepper

2 tablespoons olive oil

1 cup frozen peas or fresh baby spinach (optional)
Instructions

Lightly grease the inside of your slow cooker with olive oil.

Spread rinsed rice evenly across the bottom of the slow cooker.

Add diced onion and garlic over the rice.

Season the chicken with salt, pepper, oregano, thyme, and paprika.

Place the chicken over the rice and vegetables.

In a bowl, combine chicken broth, lemon juice, and lemon zest. Pour over the chicken and rice.

Place lemon slices on top of the chicken.

Cover and cook on LOW for 4 to 5 hours, or until chicken is cooked through and rice is tender.

Stir in peas or spinach during the last 20 minutes of cooking, if using.

Fluff rice with a fork before serving and garnish with lemon slices if desired.
