Description

A simple, hands-off slow cooker meal featuring tender chicken coated in a sweet and savory chili sauce, perfect for easy dinners and meal prep.


Ingredients

  • Boneless, skinless chicken breasts – 2 pounds (900 g)

  • Sweet chili sauce – 1 cup (240 ml)

  • Soy sauce – 1/4 cup (60 ml)

  • Honey – 2 tablespoons (30 ml)

  • Garlic, minced – 4 cloves

  • Fresh ginger, grated – 1 tablespoon

  • Rice vinegar – 1 tablespoon (15 ml)

  • Cornstarch – 1 tablespoon (8 g)

  • Water – 2 tablespoons (30 ml)

  • Salt – 1/2 teaspoon

  • Black pepper – 1/4 teaspoon


Instructions

  • Whisk sweet chili sauce, soy sauce, honey, garlic, ginger, rice vinegar, salt, and pepper in a bowl.

  • Place chicken breasts in the slow cooker and pour sauce over them.

  • Cook on low for 4–5 hours or high for 2–3 hours until tender.

  • Mix cornstarch and water, stir into the slow cooker, and cook 30 minutes more to thicken.

  • Shred chicken or serve whole with sauce.

Notes

  • Chicken thighs can be substituted for breasts.

  • Adjust sweetness by adding more or less honey.

  • Serve over rice, noodles, or vegetables for a complete meal.
