Description

A refreshing and elegant pasta salad featuring tender penne, tangy feta, sweet cranberries, and a bright orange vinaigrette perfect for any occasion.


Ingredients

  • 12 oz (340 g) penne pasta

  • 1 cup (150 g) crumbled feta cheese

  • ¾ cup (110 g) dried cranberries

  • 2 cups (60 g) fresh spinach or arugula, chopped

  • â…“ cup (50 g) sliced red onion

  • ¼ cup (60 ml) fresh orange juice

  • 1 teaspoon orange zest

  • â…“ cup (80 ml) extra-virgin olive oil

  • 1 tablespoon honey

  • 1 tablespoon Dijon mustard

  • ¼ teaspoon salt

  • ¼ teaspoon black pepper


Instructions

  • Cook the penne pasta in salted water until al dente. Drain and cool completely.

  • Whisk together orange juice, zest, honey, Dijon mustard, salt, and pepper. Slowly add olive oil while whisking.

  • Combine pasta, feta, cranberries, greens, and red onion in a large bowl.

  • Pour vinaigrette over the salad and toss gently to combine.

  • Chill for 20 minutes before serving.

Notes

For best texture, add fresh greens just before serving if preparing in advance. Adjust sweetness or acidity of the dressing to taste.
