Ingredients

12 oz (340 g) penne pasta

1 cup (150 g) crumbled feta cheese

¾ cup (110 g) dried cranberries

2 cups (60 g) fresh spinach or arugula, chopped

â…“ cup (50 g) sliced red onion

¼ cup (60 ml) fresh orange juice

1 teaspoon orange zest

â…“ cup (80 ml) extra-virgin olive oil

1 tablespoon honey

1 tablespoon Dijon mustard

¼ teaspoon salt

¼ teaspoon black pepper
Instructions

Cook the penne pasta in salted water until al dente. Drain and cool completely.

Whisk together orange juice, zest, honey, Dijon mustard, salt, and pepper. Slowly add olive oil while whisking.

Combine pasta, feta, cranberries, greens, and red onion in a large bowl.

Pour vinaigrette over the salad and toss gently to combine.

Chill for 20 minutes before serving.
Notes
For best texture, add fresh greens just before serving if preparing in advance. Adjust sweetness or acidity of the dressing to taste.
