Ingredients

2 large ripe bananas (about 240 g), mashed

2 large eggs (about 100 g without shells)

1 teaspoon baking powder (about 4 g)
Instructions

Mash the bananas in a bowl until mostly smooth.

Add the eggs and whisk until fully combined.

Mix in the baking powder and rest the batter for 2–3 minutes.

Heat a non-stick skillet over medium-low heat.

Pour about 2 tablespoons (30 ml) of batter per pancake.

Cook 2–3 minutes, flip, and cook another 1–2 minutes.

Serve warm with desired toppings.
Notes
Use very ripe bananas for best flavor and texture. Cook gently over low heat to prevent burning and ensure the pancakes cook through evenly.
