1 pound fresh green beans, trimmed and cut into 2-inch pieces

1 small onion, finely chopped

Instructions

Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish or a similar-sized casserole dish.

Bring a large pot of salted water to a boil. Add the green beans and cook for 3–4 minutes until crisp-tender. Drain and immediately plunge them into ice water to stop cooking and preserve their color.

In a medium skillet, heat olive oil or butter over medium heat. Sauté chopped onions for 4–5 minutes until soft and translucent. Add minced garlic and cook for 30 seconds until fragrant.

In a mixing bowl, combine cream of mushroom soup, milk, soy sauce, black pepper, and half of the sautéed onions. Mix until smooth. Optionally, stir in shredded cheddar cheese.

Gently fold the blanched green beans into the sauce mixture until evenly coated. Transfer into the prepared baking dish.

Sprinkle 2/3 of the French fried onions evenly on top of the casserole. Save the remaining onions for later.

Remove from oven, sprinkle remaining French fried onions on top, and bake for an additional 5 minutes to achieve a golden, crispy topping.
