Description

A comforting, cheesy casserole made with lean ground turkey, fresh zucchini, and flavorful herbs—perfect for a wholesome family meal.


Ingredients

1 lb (450 g) ground turkey

3 medium zucchinis, sliced (about 4 cups / 600 g)

1 tablespoon olive oil (15 ml)

1 small onion, chopped (1 cup / 150 g)

3 cloves garlic, minced

1 can (14 oz / 400 g) diced tomatoes, drained

1 teaspoon salt (5 g)

1/2 teaspoon black pepper (2 g)

1 teaspoon oregano (2 g)

1 teaspoon basil (2 g)

1/2 teaspoon paprika (1 g)

1 1/2 cups mozzarella cheese (170 g)

1/2 cup cheddar cheese (60 g)

1/4 cup parmesan cheese (25 g)

1/2 cup breadcrumbs (60 g)


Instructions

Preheat oven to 375°F (190°C) and grease a casserole dish.

Heat oil, sauté onion and garlic, then cook ground turkey until browned.

Add tomatoes and seasonings; simmer for 5–7 minutes.

Layer zucchini and turkey mixture in the dish.

Top with cheeses and breadcrumbs.

Bake for 25–30 minutes until golden and bubbly.

Let rest before serving.

Notes

Salt zucchini beforehand to reduce moisture

Use fresh cheese for best melting

Can be made ahead and baked later

Store leftovers in fridge up to 4 days
