A fresh and nutritious dinner salad featuring grilled chicken, crisp romaine lettuce, and a creamy homemade Caesar dressing made with Greek yogurt.
Ingredients
2 boneless skinless chicken breasts (about 12 oz / 340 g)
1 tablespoon olive oil
1 teaspoon garlic powder
½ teaspoon paprika
½ teaspoon salt
¼ teaspoon black pepper
1 teaspoon lemon juice
½ cup plain Greek yogurt (120 g)
2 tablespoons olive oil
1 tablespoon Dijon mustard
1 tablespoon lemon juice
1 teaspoon Worcestershire sauce
1 garlic clove, minced
¼ cup grated Parmesan cheese (25 g)
2–3 tablespoons water
¼ teaspoon salt
¼ teaspoon black pepper
2 heads romaine lettuce, chopped (about 8 cups / 480 g)
½ cup shaved Parmesan cheese (50 g)
1 cup whole-grain croutons (60 g)
1 tablespoon lemon juice
½ teaspoon black pepper
Instructions
Season the chicken breasts with olive oil, garlic powder, paprika, salt, pepper, and lemon juice.
Cook the chicken in a grill pan over medium-high heat for 5–6 minutes per side until fully cooked.
Let the chicken rest for 5 minutes, then slice into thin strips.
In a bowl, whisk together Greek yogurt, olive oil, Dijon mustard, lemon juice, Worcestershire sauce, garlic, Parmesan cheese, salt, and pepper to make the dressing.
Add water gradually until the dressing reaches a smooth, pourable consistency.
In a large bowl, combine chopped romaine lettuce, shaved Parmesan, croutons, lemon juice, and black pepper.
Toss the salad with the dressing until lightly coated.
Top with sliced grilled chicken and serve immediately.
Notes
Use freshly grated Parmesan for the best flavor.
For meal prep, store the dressing, chicken, and lettuce separately until serving.
Homemade whole-grain croutons can add extra crunch and nutrition.
