Ingredients

  • 1 tablespoon olive oil

  • 1 teaspoon garlic powder

  • 1 teaspoon smoked paprika

  • ½ teaspoon ground cumin

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

  • 1 cup (200 g) uncooked brown rice

  • 2 cups (480 ml) water or low-sodium chicken broth

  • 1 cup (150 g) broccoli florets

  • 1 cup (150 g) bell peppers, sliced

  • 1 cup (150 g) zucchini, sliced

  • ½ cup (120 g) plain Greek yogurt

  • 1 tablespoon lemon juice

  • 1 tablespoon olive oil

  • 1 small garlic clove, minced


Instructions

  • Cook the brown rice with water or broth according to package instructions.

  • Season the chicken with olive oil and spices, then cook in a skillet over medium heat until fully cooked.

  • Roast or sauté vegetables until tender-crisp.

  • Mix Greek yogurt, lemon juice, olive oil, garlic, and salt to make the sauce.

  • Assemble bowls with rice, chicken, vegetables, and sauce.
