Ingredients
450 g (1 lb) large shrimp, peeled and deveined
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon paprika
½ teaspoon cumin
½ teaspoon black pepper
½ teaspoon salt
Juice of 1 lemon
1 cup (185 g) quinoa
2 cups (480 ml) water or vegetable broth
1 cup (150 g) cherry tomatoes
1 cup (120 g) cucumber
1 cup (100 g) shredded carrots
1 cup (150 g) broccoli
½ cup (75 g) red bell pepper
3 tablespoons Greek yogurt
1 tablespoon olive oil
1 tablespoon lemon juice
1 teaspoon Dijon mustard
1 teaspoon honey
1 garlic clove
Instructions
Cook quinoa with water or broth for 15 minutes, then fluff.
Season shrimp with spices and cook 2–3 minutes per side.
Chop vegetables and steam broccoli if needed.
Mix dressing ingredients until smooth.
Assemble bowls with quinoa, shrimp, vegetables, and dressing.
Notes
