A fresh, light, and flavorful take on classic street corn made with wholesome ingredients and a creamy, tangy dressing.
Ingredients
4 cups corn kernels (fresh or frozen)
1 tablespoon olive oil
1/2 teaspoon smoked paprika
1/2 teaspoon ground cumin
1/4 teaspoon chili powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup plain Greek yogurt
2 tablespoons lime juice
1/4 cup chopped cilantro
1/4 cup diced red onion
1/4 cup crumbled feta cheese
1 garlic clove, minced
Instructions
Heat olive oil in a skillet over medium-high heat and cook corn until slightly charred, about 8–10 minutes.
Add smoked paprika, cumin, chili powder, salt, and pepper, and mix well.
In a bowl, whisk together Greek yogurt, lime juice, and garlic.
Combine corn, cilantro, red onion, and feta in a large bowl.
Add dressing and toss until fully coated.
Serve immediately or chilled.
Notes
Use fresh lime juice for the best flavor. Grill the corn for a smokier taste. Store in the refrigerator for up to 3 days.
