1 pound ground beef

1 teaspoon onion powder

½ teaspoon black pepper

1 can (10.5 ounces) cream of mushroom soup

1 cup sour cream

2 cups frozen shredded hash brown potatoes

2 cups shredded cheddar cheese, divided

1 cup diced tomatoes (drained)

½ cup sliced green onions

1 teaspoon dried parsley
Instructions

Heat olive oil in a skillet and cook the ground beef until browned.

Add onion, green pepper, and garlic; cook until softened. Stir in spices and seasonings.

In a bowl, combine cream of mushroom soup and sour cream. Fold in hash browns, 1 cup cheese, tomatoes, green onions, and parsley.

Spread beef mixture in a greased 9×13-inch dish. Top with the creamy potato mixture.

Sprinkle remaining cheese on top.

Bake at 350°F for 25 minutes covered, then uncover and bake an additional 15–20 minutes.
