Ingredients

  • 1 pound ground beef

  • 1 medium onion, diced

  • 1 green bell pepper, diced

  • 3 cloves garlic, minced

  • 1 teaspoon paprika

  • 1 teaspoon onion powder

  • 1 teaspoon garlic powder

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • 1 can (10.5 ounces) cream of mushroom soup

  • 1 cup sour cream

  • 2 cups frozen shredded hash brown potatoes

  • 2 cups shredded cheddar cheese, divided

  • 1 cup diced tomatoes (drained)

  • ½ cup sliced green onions

  • 1 teaspoon dried parsley


Instructions

  • Heat olive oil in a skillet and cook the ground beef until browned.

  • Add onion, green pepper, and garlic; cook until softened. Stir in spices and seasonings.

  • In a bowl, combine cream of mushroom soup and sour cream. Fold in hash browns, 1 cup cheese, tomatoes, green onions, and parsley.

  • Spread beef mixture in a greased 9×13-inch dish. Top with the creamy potato mixture.

  • Sprinkle remaining cheese on top.

  • Bake at 350°F for 25 minutes covered, then uncover and bake an additional 15–20 minutes.

  • Let rest 10 minutes before serving.
