Description
A cozy, nourishing chili made with lean ground turkey, tender sweet potatoes, hearty beans, and warm spices. Perfect for cool evenings and meal prep.
Ingredients
1 tablespoon olive oil
1 medium yellow onion, diced (about 1 cup)
3 cloves garlic, minced
1 pound lean ground turkey
2 medium sweet potatoes, peeled and diced into ½-inch cubes (about 3 cups)
1 red bell pepper, diced
1 (15-ounce) can black beans, drained and rinsed
1 (15-ounce) can kidney beans, drained and rinsed
1 (28-ounce) can crushed tomatoes
1 (14.5-ounce) can diced tomatoes
2 cups low-sodium chicken broth
2 tablespoons chili powder
1 teaspoon ground cumin
1 teaspoon smoked paprika
½ teaspoon dried oregano
½ teaspoon salt
¼ teaspoon black pepper
¼ teaspoon cayenne pepper (optional)
1 tablespoon tomato paste
Juice of ½ lime
Instructions
Heat olive oil in a large pot over medium heat. Add onion and cook 4–5 minutes. Add garlic and cook 30 seconds.
Add ground turkey and cook until browned, about 6–8 minutes.
Stir in sweet potatoes, bell pepper, and spices. Cook 1–2 minutes.
Add tomato paste, tomatoes, beans, and broth. Stir well.
Bring to a boil, reduce heat, cover, and simmer 30–35 minutes.
Stir in lime juice and adjust seasoning.
Serve warm with toppings.
Notes
Simmer uncovered for thicker chili.
Store in refrigerator up to 4 days or freeze up to 3 months.
Adjust spice level to preference.
