Ingredients

2 cups (400 g) long-grain white rice

4 cups (960 ml) water or low-sodium chicken broth

1 ½ lb (680 g) boneless, skinless chicken breasts or thighs

1 teaspoon salt

½ teaspoon black pepper

1 teaspoon smoked paprika

1 teaspoon garlic powder

2 tablespoons olive oil

¾ cup (180 ml) BBQ sauce

¼ cup (85 g) honey

1 tablespoon apple cider vinegar

½ cup (75 g) diced onion

½ cup (75 g) diced bell pepper

2 tablespoons chopped fresh parsley (optional)
Instructions

Rinse rice and cook with water or broth until tender; fluff and set aside.

Season chicken with salt, pepper, smoked paprika, and garlic powder.

Heat olive oil in a skillet and cook chicken until golden and cooked through; remove and set aside.

In the same skillet, sauté onion and bell pepper until softened.

Stir in BBQ sauce, honey, and apple cider vinegar; simmer until slightly thickened.

Slice or shred chicken, return it to the skillet, and coat with sauce.

Serve chicken over rice and garnish if desired.
