Ingredients

  • 2 cups (400 g) long-grain white rice

  • 4 cups (960 ml) water or low-sodium chicken broth

  • 1 ½ lb (680 g) boneless, skinless chicken breasts or thighs

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • 1 teaspoon smoked paprika

  • 1 teaspoon garlic powder

  • 2 tablespoons olive oil

  • ¾ cup (180 ml) BBQ sauce

  • ¼ cup (85 g) honey

  • 1 tablespoon apple cider vinegar

  • ½ cup (75 g) diced onion

  • ½ cup (75 g) diced bell pepper

  • 2 tablespoons chopped fresh parsley (optional)


Instructions

  • Rinse rice and cook with water or broth until tender; fluff and set aside.

  • Season chicken with salt, pepper, smoked paprika, and garlic powder.

  • Heat olive oil in a skillet and cook chicken until golden and cooked through; remove and set aside.

  • In the same skillet, sauté onion and bell pepper until softened.

  • Stir in BBQ sauce, honey, and apple cider vinegar; simmer until slightly thickened.

  • Slice or shred chicken, return it to the skillet, and coat with sauce.

  • Serve chicken over rice and garnish if desired.

Notes

  • Adjust the sweetness by increasing or decreasing the honey to taste.
