  • 1 cup whole milk

  • 1 cup shredded sharp cheddar cheese

  • 1 cup diced fresh tomatoes

  • 1/2 cup diced onions

  • 1/2 cup diced bell peppers (any color)

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1/4 teaspoon garlic powder

  • 1/4 teaspoon paprika

  • 2 tablespoons chopped fresh parsley

  • 1 tablespoon olive oil or butter (for greasing the pan)


Instructions

  • Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish with olive oil or butter.

  • Dice tomatoes, onions, and bell peppers. Drain any excess juice from tomatoes.

  • In a large bowl, whisk together eggs, milk, salt, pepper, garlic powder, and paprika until smooth.

  • Fold in cheddar cheese, diced tomatoes, onions, bell peppers, and chopped parsley. Mix gently.

  • Pour the mixture into the prepared baking dish and smooth the top.

  • Bake for 35–40 minutes, until eggs are set and top is lightly golden brown.

  • Check doneness with a toothpick or knife; it should come out clean.

  • Let cool 5–10 minutes before slicing. Garnish with extra parsley if desired.
