½ teaspoon black pepper (1 g)

1 teaspoon salt (5 g)

1 tablespoon lemon juice (15 ml)

1 cup long-grain rice (200 g)

2 cups water or low-sodium chicken broth (480 ml)

½ teaspoon salt (2.5 g)

1 cup cherry tomatoes, halved (150 g)

1 cup cucumber, diced (130 g)

½ cup shredded carrots (60 g)

½ cup corn kernels, cooked (75 g)

Instructions

Mix olive oil, spices, salt, and lemon juice. Coat the chicken and marinate for at least 20 minutes.

Cook rice with water or broth and salt until tender. Fluff and set aside.

Grill chicken over medium-high heat for 6–7 minutes per side until fully cooked. Rest and slice.
