A wholesome, naturally sweet muffin perfect for breakfast or a nourishing snack, made with ripe bananas and creamy peanut butter.
Ingredients

Ripe bananas: 3 medium (about 360 g mashed)

Natural peanut butter: 1/2 cup (128 g)

Honey or maple syrup: 1/3 cup (80 ml)

Eggs: 2 large

Unsweetened milk: 1/4 cup (60 ml)

Vanilla extract: 1 teaspoon (5 ml)

Whole wheat flour or oat flour: 1 1/2 cups (180 g)

Baking powder: 1 teaspoon (5 g)

Baking soda: 1/2 teaspoon (3 g)

Ground cinnamon: 1 teaspoon (2.5 g)

Salt: 1/4 teaspoon (1.5 g)
Instructions

Preheat the oven to 175°C (350°F) and line a muffin tin.

Mash the bananas in a large bowl until mostly smooth.

Add peanut butter, honey or maple syrup, eggs, milk, and vanilla. Mix well.

In another bowl, combine flour, baking powder, baking soda, cinnamon, and salt.

Gradually fold the dry ingredients into the wet mixture until just combined.

Divide batter evenly into muffin cups.

Bake for 18–22 minutes until a toothpick comes out clean.

Cool slightly before serving.

Use very ripe bananas for the best natural sweetness.
