Description

A wholesome, naturally sweet muffin perfect for breakfast or a nourishing snack, made with ripe bananas and creamy peanut butter.


Ingredients

  • Ripe bananas: 3 medium (about 360 g mashed)

  • Natural peanut butter: 1/2 cup (128 g)

  • Honey or maple syrup: 1/3 cup (80 ml)

  • Eggs: 2 large

  • Unsweetened milk: 1/4 cup (60 ml)

  • Vanilla extract: 1 teaspoon (5 ml)

  • Whole wheat flour or oat flour: 1 1/2 cups (180 g)

  • Baking powder: 1 teaspoon (5 g)

  • Baking soda: 1/2 teaspoon (3 g)

  • Ground cinnamon: 1 teaspoon (2.5 g)

  • Salt: 1/4 teaspoon (1.5 g)


Instructions

  • Preheat the oven to 175°C (350°F) and line a muffin tin.

  • Mash the bananas in a large bowl until mostly smooth.

  • Add peanut butter, honey or maple syrup, eggs, milk, and vanilla. Mix well.

  • In another bowl, combine flour, baking powder, baking soda, cinnamon, and salt.

  • Gradually fold the dry ingredients into the wet mixture until just combined.

  • Divide batter evenly into muffin cups.

  • Bake for 18–22 minutes until a toothpick comes out clean.

  • Cool slightly before serving.

Notes

  • Use very ripe bananas for the best natural sweetness.

  • Store in an airtight container or freeze for longer storage.

  • These muffins taste even better the next day as the flavors develop.
