Ingredients

12 oz (340 g) elbow macaroni

6 cups (180 g) fresh spinach, chopped

3 tbsp unsalted butter

3 tbsp all-purpose flour

3 cups (720 ml) whole milk

2 cups (200 g) sharp cheddar cheese, shredded

1 cup (100 g) mozzarella cheese, shredded

½ cup (50 g) Parmesan cheese, grated

1 tsp salt

½ tsp black pepper

½ tsp garlic powder
-
¼ tsp ground nutmeg

½ cup (30 g) breadcrumbs (optional)

1 tbsp melted butter (optional)
Instructions

Cook macaroni in salted boiling water until al dente. Drain and set aside.

Wilt spinach in a pan over medium heat for 2–3 minutes. Set aside.

Melt butter in a saucepan, whisk in flour, and cook for 1 minute.

Gradually add milk, whisking until thickened.

Stir in cheeses and seasonings until smooth.

Combine pasta and spinach with the sauce.

Transfer to a baking dish, add breadcrumb topping if desired, and bake at 375°F (190°C) for 20–25 minutes.
Notes
For extra creaminess, serve immediately after mixing. Add a splash of milk when reheating to maintain a smooth texture.
