Description

A creamy, comforting mac and cheese enriched with tender spinach and a rich blend of cheeses, perfect for family meals and cozy evenings.


Ingredients

  • 12 oz (340 g) elbow macaroni

  • 6 cups (180 g) fresh spinach, chopped

  • 3 tbsp unsalted butter

  • 3 tbsp all-purpose flour

  • 3 cups (720 ml) whole milk

  • 2 cups (200 g) sharp cheddar cheese, shredded

  • 1 cup (100 g) mozzarella cheese, shredded

  • ½ cup (50 g) Parmesan cheese, grated

  • 1 tsp salt

  • ½ tsp black pepper

  • ½ tsp garlic powder

  • ¼ tsp ground nutmeg

  • ½ cup (30 g) breadcrumbs (optional)

  • 1 tbsp melted butter (optional)


Instructions

  • Cook macaroni in salted boiling water until al dente. Drain and set aside.

  • Wilt spinach in a pan over medium heat for 2–3 minutes. Set aside.

  • Melt butter in a saucepan, whisk in flour, and cook for 1 minute.

  • Gradually add milk, whisking until thickened.

  • Stir in cheeses and seasonings until smooth.

  • Combine pasta and spinach with the sauce.

  • Transfer to a baking dish, add breadcrumb topping if desired, and bake at 375°F (190°C) for 20–25 minutes.

Notes

For extra creaminess, serve immediately after mixing. Add a splash of milk when reheating to maintain a smooth texture.
