Ingredients

12 ounces short pasta (rotini, fusilli, or penne)

3 cups corn kernels

1 cup cherry tomatoes, halved

1 cup red bell pepper, diced

1/3 cup fresh cilantro, chopped

3/4 cup mayonnaise

1/4 cup sour cream

Instructions

Cook pasta in salted boiling water until al dente, drain, and cool.

Heat olive oil in a skillet and roast corn until lightly charred; cool.
