Ingredients

  • 12 ounces short pasta (rotini, fusilli, or penne)

  • 3 cups corn kernels

  • 1 tablespoon olive oil

  • 1 cup cherry tomatoes, halved

  • 1 cup red bell pepper, diced

  • 1/2 cup red onion, chopped

  • 1/3 cup fresh cilantro, chopped

  • 3/4 cup mayonnaise

  • 1/4 cup sour cream

  • 2 tablespoons lime juice

  • 1 teaspoon lime zest

  • 1 teaspoon chili powder

  • 1/2 teaspoon smoked paprika

  • 1/2 teaspoon ground cumin

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1/2 cup crumbled cheese


Instructions

  • Cook pasta in salted boiling water until al dente, drain, and cool.

  • Heat olive oil in a skillet and roast corn until lightly charred; cool.

  • Whisk mayonnaise, sour cream, lime juice, zest, and spices in a bowl.

  • Add pasta, corn, vegetables, cilantro, and cheese to the dressing.

  • Toss gently, chill for 30 minutes, and serve.
