Description
A hearty, comforting family dinner made with layers of tender sweet potatoes, seasoned ground turkey, and melted cheese. Perfect for busy weeknights and meal prep.
Ingredients
2 large sweet potatoes (about 2 pounds / 900 g), peeled and sliced into ¼-inch rounds
1 tablespoon olive oil (15 ml)
1 pound (450 g) ground turkey
1 small yellow onion, diced (about 1 cup / 150 g)
2 cloves garlic, minced
1 red bell pepper, diced (about 1 cup / 150 g)
1 teaspoon salt (5 g)
½ teaspoon black pepper (2 g)
1 teaspoon paprika (2 g)
1 teaspoon dried oregano (1 g)
½ teaspoon ground cumin (1 g)
1 cup (240 ml) tomato sauce
½ cup (120 ml) low-sodium chicken broth
1 cup (100 g) shredded mozzarella cheese
½ cup (50 g) shredded cheddar cheese
2 tablespoons fresh parsley, chopped (optional)
Instructions
Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
Arrange half of the sliced sweet potatoes evenly in the bottom of the dish.
Heat olive oil in a skillet over medium heat. Cook onion for 3–4 minutes. Add garlic and cook 30 seconds.
Add ground turkey and cook 6–8 minutes until browned.
Stir in bell pepper, salt, pepper, paprika, oregano, and cumin. Cook 2–3 minutes.
Add tomato sauce and chicken broth. Simmer 5 minutes.
Spread half of the turkey mixture over sweet potatoes. Layer remaining sweet potatoes on top, then remaining turkey mixture.
Cover with foil and bake 35–40 minutes until sweet potatoes are tender.
Remove foil, sprinkle mozzarella and cheddar on top, and bake 10–15 minutes until cheese is melted and golden.
Rest 5–10 minutes before serving. Garnish with parsley if desired.
Notes
Slice sweet potatoes evenly for best results.
Dish can be assembled 24 hours in advance and refrigerated before baking.
Store leftovers in the refrigerator up to 4 days or freeze up to 3 months.
