  • 1 lb cooked prime rib, thinly sliced

  • 4 sandwich rolls, soft or slightly crusty

  • 4 tablespoons unsalted butter, softened

  • 4 cloves garlic, minced

  • 1 teaspoon fresh thyme, finely chopped

  • 1 teaspoon fresh rosemary, finely chopped

  • Salt and freshly ground black pepper, to taste

  • 1 cup caramelized onions (optional)

  • 4 slices provolone or Swiss cheese

  • 1 cup fresh arugula or spinach

  • 2 tablespoons Dijon mustard or horseradish sauce (optional)


Instructions

  • Prepare the garlic butter by mixing softened butter, minced garlic, thyme, rosemary, salt, and pepper in a small bowl.

  • Preheat oven to 350°F (175°C). Slice sandwich rolls and spread garlic butter on each half. Toast in the oven 5–7 minutes until golden.

  • Heat the prime rib slices in a skillet over medium heat for 2–3 minutes until warmed.

  • Place cheese slices on top of the heated prime rib, cover, and melt for 1–2 minutes.

  • Spread extra garlic butter on toasted rolls if desired. Layer arugula or spinach, cheesy prime rib, and caramelized onions. Add Dijon mustard or horseradish sauce if desired.

  • Close the sandwich with the top half of the roll and serve immediately.
