Description
A vibrant Mediterranean-inspired meal featuring juicy grilled chicken marinated with lemon, garlic, olive oil, and herbs. Perfect for family dinners, outdoor grilling, or healthy meal prep.
Ingredients
4 boneless skinless chicken breasts (about 680 g / 1½ lb)
60 ml (¼ cup) extra virgin olive oil
45 ml (3 tablespoons) fresh lemon juice
4 garlic cloves, minced
1 tablespoon dried oregano (3 g)
1 teaspoon dried thyme (1 g)
1 teaspoon paprika (2 g)
1 teaspoon sea salt (6 g)
½ teaspoon black pepper (1 g)
1 tablespoon fresh parsley, chopped (4 g)
2 cups cooked rice (about 400 g)
1 cup sliced cucumbers (150 g)
1 cup cherry tomatoes, halved (150 g)
½ cup crumbled feta-style cheese (75 g)
1 tablespoon olive oil (15 ml)
1 tablespoon lemon juice (15 ml)
Instructions
In a large bowl, whisk together olive oil, lemon juice, garlic, oregano, thyme, paprika, salt, pepper, and parsley.
Add the chicken breasts and coat them thoroughly with the marinade. Cover and refrigerate for at least 30 minutes or up to 4 hours.
Preheat the grill to medium-high heat (200°C / 400°F).
Grill the chicken for 6–7 minutes per side until the internal temperature reaches 74°C (165°F).
Remove the chicken from the grill and let it rest for 5 minutes.
In a bowl combine cucumbers, tomatoes, feta-style cheese, olive oil, and lemon juice to make a fresh side salad.
Serve the grilled chicken with the salad and cooked rice.
Notes
For extra flavor, marinate the chicken for several hours before grilling. Always allow the chicken to rest after cooking to keep it juicy. Leftover chicken can be sliced and used in wraps, salads, or grain bowls the next day.
